Vegan & Gluten free Christmas Cookies

Tis the season to give yourself permission to enjoy a few sweet treats that you wouldn’t normally have in your daily or weekly health regime.  It’s Christmas.  Let’s enjoy without letting down our healthy “guard”.  Rather than reaching for the white sugar laden, white gluten flour and bad fat processed cookies, here is a recipe for some “good” cookies made with “good” ingredients.

Christmas Cookie Recipe:  (all of my ingredients are organic and non-GMO)

– 2 flax eggs (2 tbsp ground flax seeds + 6 tbsp water)

– 1 cup oat flour

– 2/3 cups almond flour

– 2 tsp baking powder

– 1/2 tsp baking soda

– 1/2 tsp Himalayan salt

– 2/3 coconut sugar

– 1/3 cup almond butter

– 2 tbsp coconut oil

– 2 tsp vanilla extract

– 1/4 cup vegan chocolate chips

– 1/4 cup shelled pistachios

– 1/4 cup dried cranberries

Heat the oven to 350 degrees.

In a small bowl, combine flax and water to make an egg replacement.

In a medium size bowl, mix all of the dried ingredients.

In a third bowl mix all of the wet ingredients including the flax eggs.

Mix wet and dry ingredients together.

Fold in chocolate chips and cranberries and pistachios.

Line baking sheets with parchment paper.

Form cookie dough into 2 tbsp balls, and put on the cookie sheet.

Bake cookies, one sheet at a time, for 12 to 15 minutes.

Let cool and enjoy.

What a great cookie recipe for health conscious diets like mine.  These cookies taste so good and they deliver nutrition to your body instead of all of that processed junk.
