This is one big mushroom. I never ever purchased portobello mushrooms until I became vegan with my diet. Now portobello mushrooms are on my grocery list every week. I love them….and thankfully I can get organic ones at my nearby market.
Portobello mushrooms, a member of the cremini mushroom family, are so meaty and I often use them as the meaty portion of my dinner plate. I sometimes marinate them and grill them served alongside potatoes and a veggie and sometimes I grill them and put them in between a nice gluten free burger bun and add my favorite toppings. I have also stuffed the mushrooms with cooked quinoa and herbs and baked them in the oven. There are so many things you can do with a portobello mushroom but aside from being tasty…they are very good for you too.
One portobello mushroom has a mere 19 calories, 2 grams of protein, 2 grams of fiber and 3 grams of carbohydrates. These mushrooms are great sources of copper, potassium, phosphorus and selenium, and vitamin D. One cup of diced portobello mushroom supplies your body with 10% of your daily recommended allowance of vitamin B6 and 24% of your RDI of niacin.
When you are going to use portobello mushrooms in your meal just wipe them clean with a mushroom brush or dry paper towel to remove any dirt from the outer portion before including in a recipe. Do not rinse in water as mushrooms will absorb the water and won’t cook up so well.
PORTOBELLO MUSHROOM BURGERS:
2 Portobello mushrooms, wiped clean and stem removed
1/4 cup good extra virgin olive oil
3 tbsp. balsamic vinegar
2 tsp. minced fresh garlic
1/2 tsp. dried basil (could use fresh if you have it)
1/4 tsp. dried thyme (fresh if you have it)
1/4 tsp. dried oregano (fresh if you have it)
Pinch of Himalayan salt and fresh ground black pepper
Mix oil, vinegar, garlic, herbs and salt and pepper in a bowl. Pour over mushroom caps and let sit for 20 minutes, turning the mushrooms once in the marinade. Place mushrooms on heated grill and cook for 4 minutes per side. Place on a burger bun and add your favorite toppings such as avocado, Dijon mustard, onion slices etc.
