Cabbage Roll Crockpot Casserole – Vegan and Gluten Free

cabbageLately I have been using my crockpot and loving it.  There is nothing better than throwing a bunch of healthy ingredients in the crockpot, giving it a stir, putting the lid on, turning the heat on and letting it all simmer together all day.  Then when dinner time rolls around, I lift the lid and add a few seasonings to make things taste just right and voila…..dinner is served.

We love cabbage rolls in our house but they are so labor intense that I just don’t make them very often because they take time.  So I thought why not put all of the ingredients to cabbage rolls into the crockpot and see what happens.  The results were yummy.

Ingredients:  (all of my ingredients are organic)

1 small head of green cabbage, chopped into strips

1 large onion, chopped

3 garlic cloves, minced

2 cans of diced tomatoes or stewed tomatoes (I use Pomi tomatoes from a tetra pack rather than cans)

3 tbsp. tomato paste

1 package gluten free tempeh – diced (this is my meat replacement)

1 cup cooked chickpeas or any cooked bean (optional)

salt and pepper to taste

1 tbsp. dried oregano

2 tbsp. vegan Worchestershire Sauce

Put all ingredients in the crockpot on low in the morning and let simmer all day.   Before serving taste and season to your liking.

I like to serve this over cooked brown rice.  Along with a green salad on the side, you have a healthy and nutritious dinner that was pretty easy to make and low calorie, low fat and very tasty.
