I had a bunch of Roma tomatoes in my kitchen and would usually turn them into a nice pasta sauce or a bruschetta chop. Roma tomatoes have such a succulent, sweet taste to them. I always include a salad with our dinner every night and was pretty tired of the same old green salads I tend to make. So I took those Roma tomatoes and turned them into this delicious side salad. It is a quick and simple, fresh and wholesome salad.
All of my ingredients are fresh and organic.
8 Roma tomatoes, washed, sliced lengthwise into 6 sections (depending on the size of the tomatoes)
1 tablespoon oregano, chopped or 1 teaspoon dried oregano
2 garlic cloves, minced
1 dozen pitted Kalamata olives, sliced
2 tablespoons capers, chopped
Juice from 1 fresh lemon
1 small red onion, finely minced
1 tablespoon fresh Italian parsley, chopped
2 red peppers, roasted and peeled, seeded and chopped
4 tablespoons extra virgin olive oil
1 teaspoon chopped red chili flakes
Himalayan salt and fresh ground pepper to taste
Mix all of these ingredients in a large bowl. Refrigerate to let the flavours come together while you prepare the rest of the meal. Serve on a bed of greens if you like or just spoon into individual salad bowls.
