Peanut Butter and Chocolate Squares

These tasty little treats are so good that whenever I make them they disappear in no time.  When I serve them to company they always ask for the recipe and quite often take a few of these treats home with them.  My husband regularly requests that I make them so this recipe has become a “go to” recipe when I want to make a HEALTHY TREAT.  They are vegan and there is very little sugar overall, and the little bit of sugar in the recipe is not refined.


1/2 cup of Earth Balance Vegan “butter” (if you buy the box of Earth Balance “Butter” it comes in 4 individual blocks.  1 of these blocks is what you need)

1 cup of crunchy healthy organic unsweetened peanut butter

3/4 to 1 cup of Graham Wafer Crumbs (Healthy Valley has a low sugar selection)

1/4 cup of coconut sugar or maple sugar or other unrefined sweetener

1 to  1 & 1/2 cups carob chips or non-dairy chocolate chips

1/4 cup of nut milk (I use Hemp milk)

1/4 cup raw organic pecans or peanuts

Get your muffin tin out and put liner in 12 spots.

Melt the Earth Balance in a saucepan on low to medium heat.  You don’t want it to boil.  Once liquified stir in peanut butter, graham crumbs and your sweetener of choice.  I use coconut sugar or maple sugar.  Take the pot off the heat and stir well to combine.  Spoon this mixture into the lined muffin tin evenly dividing into 12.

Put the chocolate chips and milk in the same pot.  Stir over low heat until the chocolate is melted.    Then spoon the melted chocolate evenly over each muffin cup and top with your chopped nuts.

Place the muffin tin in the refrigerator for a few hours to chill.  They are ready to eat.

I store them in the refrigerator in a sealed glass container.  But I must mention….they don’t last long.  They disappear rather quickly.
