Quinoa (keen-wa) is an incredibly nutritious grain with a light texture and nutty flavour. It makes a great side dish on it’s own served warm or is very versatile to create cold salads with. Quinoa is high in protein and low in calories. It is a great food for everyone but is a really good idea to add it to a vegetarian or vegan diet.
1 cup quinoa rinsed
2 cups cold water
2 fresh ripe organic tomatoes, chopped or 1 cup grape tomatoes
1/2 cup fresh parsley, chopped
1/4 English cucumber, chopped
1/2 cup red, yellow and orange bell peppers, diced
Dressing:
3 tablespoons extra-virgin olive oil
2 tablespoons freshly squeezed lemon juice
1 teaspoons hot pepper flakes
1 teaspoon Himalayan salt
1/2 teaspoon pepper
Cook quinoa in the water as per package instructions. In a large bowl combine all veggies and stir in cooled quinoa.
Whisk all dressing ingredients together in a small bowl. Pour dressing over salad and toss to coat. Serve chilled or at room temperature.
