Oh my goodness…this is a treat!
BROWNIE INDGREDIENTS:
1 cup raw walnuts
1 cup dates
1/4 cup raw cacao powder
ICING INGREDIENTS:
2 avocados
1/2 cup of yacon syrup (or agave nectar… if you prefer)
1/4 cup raw cacao powder
2 tablespoons good quality coconut oil
1 tablespoon pure vanilla extract
a pinch of Himalayan Salt
a dash of cinnamon
To make the brownie part of the recipe put the three brownie ingredients in a food processor and process until the ingredients are blended and a bit crumbly in texture. Do not over process. Press this mixture into a pie plate. I sometimes double up this part of the recipe to give a thicker brownie.
To make the icing put all of the ingredients into the cleaned food processor and blend on high until a smooth creamy texture is achieved. Scoop this icing onto the brownie base and spread it around evenly.
There you have it. Easy and quick. Yummy, yummy. I keep this brownie dish in my freezer. It is really delicious with a scoop of “raw cashew vanilla icecream” but you can eat it on it’s own or with your favorite topping.
It is so much fun to have a dessert that makes you feel like you are being indulgent but in actual fact, you are consuming superfoods and enhancing your nutritional well-being.
